Disable the black and white mode in sculpt mode?

I must have pressed a button but everything is black and white when I go in to sculpt mode except for the new shapes that I make, even though I'm trying to sculpt from the default model.

It's essentially zoning everything out so that you can focus on the sculpt. If you want to edit an existing sculpt, just tunnel in to whatever you're trying to change until your sculpting tools pop out.

I wasn't sure what you meant by tunnel in, but I pressed l1 and x(i think) and it focused on the part I wanted to

Go to the options menu, and set the UI guide elements to "minimal". Hope that helps :)
