Auto rotate to level out aircraft on ONLY one axis

I have a very basic aircraft. When there is no stick input I want the aircraft to automatically level out the wings so the wingtips are both an equal distance from the ground (y-axis). But I do NOT want the angle of the nose and tail (x-axis) to be affected at all, and here lies my problem.

I have experimented with Gyroscope and Look At Rotator, but whatever I seem to do the aircraft still levels out on BOTH y- and x-axis, or not at all. The Look At Rotator rotates on both axis even with strength turned to 0 on both X- and Z-axis, which seems strange to me.

This is slowly driving me nuts, as there must be a solution to this.

The gyro method seems to work fine for me. Just make sure you don't have "align all axes" turned on. https://youtu.be/g_bx4Jao-sY
