Why is there no "Start fresh" option in instruments, sound effects and animations?

As I understand, you can make instruments and sound effects currently by recording a sound from the mic and tweaking with that sound, right? If this is the case, why is there no start fresh option for them? Is there any other way to make a sound effect or instrument?

Animations can be made using recorders, keyframes and timelines I know, so why can't you start fresh in the animations section?
