How do i cut without stamping a negative shape ?

Hi

I see that when I want to substract the game stamps a negative shape in the scene BUT I would like to know how I could cut in live like kareems seemed to do when he was sculpting..

You have to change stamp to smear. It's under sculpt mode tools (far left)
