In sculpt mode you tap the top of your "off hand" move to the bottom of the other one and it will switch between add/subtract. That's the gesture you want I believe

It is definitely in the game...All you need to do is first drop the instrument into your world then hold L1 and press X on it to open up the panel that you play on. Best of luck
