How is up, up!
If i start an empty dream and twist and turn the camera but unknowingly leave it wonky, then decide to build a platform with the up/virticle guide, is it pointing up from my wonky camera axis or up from what the game decides is up.
Only asking becouse when i first started, I started with a simple square platform juped into a puppet and it was like walking uphill (i wasnt using the up tool though)

"Up" is according to gravity--kinda like the real world. The direction of gravity never changes, regardless of the camera's angle.
Game scenes start with a flat sculpt to help you know what "flat" is. The grid is also aligned by default to the scene, so that makes it easy to make things flat. When using non-flat things to build a scene, I usually add a ruler gadget (menu > gadgets > gameplay gear) into the scene, and align it to the grid so it's flat. It's not shown in-game, but is helpful for measuring things and generally orienting yourself.
Another helpful setting is to show the "floor" (menu > eyeball > show floor). This shows a "floor" plane in create mode which can also help orient yourself while working on it. -
