Light the background to replace ambient light?
I want to have a dark/black background but if I do that using the sky tool the objects in the scene look terrible. How do I effectively replace the additional lighting that the coloured sky was providing, across the scene?

If the sky is dark, it won't emit light. I think you have to options here:
A) Recreate the sky's light using Spotlights.
B) Make your own dark sky with sculpts or fog. Then you can increase the Sky's brightness to have that ambient light you want. Note that you will probably need to increase Fog Range as well.

If I create a dark sky using sculpts (easy enough probably) - will the ambient from the sky still reach all objects in front of my fake background? You don’t do any occlusion stuff? I’d set the sculpt to not cast shadows

You will need to increase the Sky's brightness to make sure the ambient light reaches them. Doing this will make the ambient fog very visible, so you'll need to increase the Fog Range.
I tried it out and it is possible ;)
