How do I stretch something before placing it in sculpt mode? I’m curious because I have some ideas but it requires subtracting at a certain size.

As far as I have been able to determine, you can't. You have to place, then stretch.
From what the MM has been saying in my questions about this, it looks like you can only subtract with the pre-set shapes...which is not happy-making. -
Press L1+Square when you have a shape selected to enter tweak mode. (This is the shortcut for a button on the right side of the screen.) You can resize the and rotate the shape precisely on three axes, and some shapes like the donut can change in ways other than just stretching. You can press the "stamp" button on the right side of the screen to stamp it exactly where you positioned/sized it, or back out of that menu to use that new shape as your brush for sculpting.
If you go to the Mode menu and select "Stamp" instead of "Smear" before selecting your shape, you can also enable Soft Blend in that menu. -
