how to make strokes collide with scenery/player?
I'm made some nice flowers that sway in the wind, and I'd like them to be pushed out of the way when the player walks over them.
Is there some option in the strokes I've missed, or is my character's hitbox too small? Or is this not an option altogether?

You could probably do this by attaching a Force Applier on your character. Think of it as a force field. Set it to Radial and Push. Adjust the field size to something appropriate. Falloff is also worth looking into.
Set the force applier to only interact with the plants, and make the plants movable in some way.
You can also use this same technique to make bombs with knockback effects and such. Force applier is very versatile, but perhaps costly on the thermometer. -
Yeah I thought of that but I think I've seen some characters with strokes on them that collide with the scenery. Maybe I'm wrong ¯\_(ツ)_/¯
